A twist on a Christmas classic, full of good fats and protein.
Makes 1 tray

1 cup coconut oil
1/2 cup cacao butter
1/4 cup raw honey
1/2 tsp fine salt
3/4 cup desicated coconut
1/2 cup hemp seeds
1/2 cup goji berries (cherries and dried fruit work well too)
1 and 1/2 cups puffed brown rice
1. Heat coconut oil and cacao butter on low heat. When melted, take off the heat and add the raw honey and salt. Mix until well combined.
2. Add in the desicated coconut, hemp seeds, goji berries and puffed brown rice, mix together.
3. Pour into the baking paper lined tray and freeze for 30 mins.
4. Cut into small squares and serve right away. Put back in the fridge unless serving.
