You might be wondering what on earth is Tabbouleh and why do I need a paleo version? Well you don’t but we wanted to hempify this traditional dish that is normally made with soaked bulgur wheat.
Hemp seeds and oil go so well in this recipe, using fresh cucumber, tomatoes, loads of fresh herbs (hello powerful polyphenols) and a fresh citrusy squeeze of lemon, this is one of our favourite plant based side dishes.

2 cucumbers, chopped
1 cup cherry tomatoes, chopped
1/2 bunch parsley, finely chopped
1/2 lemon, juiced
1/4 cup hemp seeds
2 tablespoons hemp seed oil
Generous pinch of salt
1. In a large bowl, combine all ingredients and toss to coat. Serve!
